Roast Beef Onion Marmalade Sandwich


  • Sliced Roast Beef
  • Ciabatta Buns
  • Fotina cheese
  • Arugula

Caramelized Onion Marmalade*:

  • 1/2 Tbsp Kirkland Butter
  • 1 1/2 Tbsp brown sugar 
  • 5 cups chopped onion
  • 2 tsp Minced Garlic
  • 1 Tbsp Red Wine Vinegar
  • Pinch of salt  and pepper

Fig Aioli, optional:

  • 1 whole egg plus 2 large egg yolks
  • 1 tsp minced garlic
  • 2 cups Avocado Oil 
  • 3 Tbsp lemon juice
  • One 8-oz jar Fig Jam
  • Salt 

How to Prepare:

  1. For the Marmalade, begin by melting the butter in a large skillet. Add the sugar, and cook until the sugar dissolves, stirring frequently. Add onion and garlic to the pan. Cover and cook for 30 minutes or until the onions are tender, stirring occasionally. Then, uncover and add vinegar to the mixture. Cook uncovered, stirring frequently, for 10 minutes, or until golden brown. Add salt and pepper to taste. Store extra in the refrigerator.
  2. Next, make the Fig Aioli. First, add the eggs and garlic to a food processor. Then, slowly add the oil and lemon juice. Next, add in the jam and process until mixed well. Season with salt.
  3. Now, begin on the sandwiches. Feel free to toast the buns in the oven for extra crispness.
  4. Then, layer on the buns your Marmalade, arugula, Roast beef, cheese, and Fig Aioli. Enjoy!
