Waffle Tacos


  • 20 Eggo waffles
  • 13/4 tbsp butter
  • 10 large eggs scrambled
  • Salt and Pepper to taste
  • 1 pound bacon or sausage cooked and crumbled
  • 2 cups shredded sharp cheddar cheese
  • Salsa
  • Maple syrup for serving

How to Prepare:

  1. In large skillet over medium-high heat, cook and crumble the sausage until no longer pink.
  2. In a sperate skillet, melt the butter and scramble the eggs.  Season with a little salt and pepper.  Add the cooked sausage to the scrambled eggs, stir to combine.  Cover and keep warm
  3. Heat waffle in microwave.  Fold waffle and fill with egg and sausage mixture.  Top with shredded cheese and serve with your favorite salsa or maple syrup.
